Some casks develop flor, a la Selosse and Chartogne. This biological aging is allowed to continue with the decision about how to make the blends for secondary fermentation in summer. At Vincey, the wines spend quite a long time on lees before remuage by hand and disgorgement.

JD 94: "The 2021 Champagne Grand Cru Mesnil-sur-Oger Lieu-Dit Auge Brut Nature pours a brilliant silver/straw color and offers notes of lemon balm, fresh apples, yellow fruit, and chalky earth. Made from 100% Chardonnay, it's vertical and straight and the most reductive of the range. Medium-bodied, it has great tension but is not austere, with fantastic electricity and a lot of gastronomic focus. Drink 2025-2045. This vineyard is one of their latest plots, planted in 1971 and located behind the restaurant Le Mesnil. A lack of topsoil contributes to the wine's verticality, and while the producers aim for high maturity, the wine retains a refreshing feel."
