2024 Les Horees, Volnay le Matin Blanc 750ml

“The origin of the term Les Horées lies in Greek mythology. There are plenty of different explanations, and I am still looking for a good book to better understand its history and evolution. I describe Les Horées as the feast to celebrate the changing of the seasons. The goddesses of the seasons are called Horae (hours), and one can find the etymology of the word Horées there.” - Catharina and Guilhem Sadde

• Terroir: From Sur Roches (at the top of a southeast-facing slope, close to the forest, planted from north to south, very shallow topsoil with many exposed stones) and Paux Bois (at the same level as Sur Roches but to the left towards the valley, same soil).
• Viticulture: Sur Roches: farmed by the Les Horées team, organic and biodynamic (not certified), horse plowed. Paux Bois: purchased grapes, sustainable.
• Vinification: Vinified together, 50% whole cluster, ambient yeast fermentation in stainless steel with no added SO2, aged for 14 months in used barrels, minimal added SO2 after malolactic fermentation.
